Hola desde Tulum - part 1:

Having a home in Tulum, Mexico I have learned to embrace the culture and the food scene by experimenting with unknown produce, uber hot peppers and even crickets at one point (not knowing what the crunchy bits were after declaring they were delicious there was no turning back)

However not everyone is as 'curious'as I am so when we have company at our Casa, creating a Mexican Fiesta menu is the easiest to do on a budget and guaranteed to make everyone happy

Here are my top picks and the easy breazy recipes for you to enjoy - Salud!

1) Jalapeno Margarita - 3 ounces premium tequila (if you need salt & lime this is NOT the tequila to use, 1 ounce triple sec, 2 slices of jalapeno,1 wedge of lime squeezed - mix and pour over ice - serves 2 (unless you are Jackie)


2) Bacon wrapped Jalapeno Poppers - 5 large jalapeno peppers (sliced and seeds removed) 1 package of cream cheese, 10 slices of bacon (if peppers are smaller cut the bacon in 1/2)

-fill each 1/2 with cream cheese - wrap with strip of bacon. Place on foil lined baking sheet and cook for 45 minutes at 375 oven

3) Pico de Gallo - 4 roma tomatoes chopped, 1 jalapeno sliced, 1/4 white onion chopped same size as tomato, healthy amount of cilantro, salt & pepper - can't get easier than this. Put everything in a bowl - serve with chips - not need to buy store bought salsa again with all the extra sugars, etc
