Peanut Butter Squares

1/2 Cup peanut butter

1/4 Cup coconut flour

1/4 Cup icing sugar

1 tsp vanilla

pinch of salt

2 Cups chocolate chips

2 TBSP coconut oil

1 TBSP sea salt to garnish


1) Line an 8 x 8 baking pan with parchment paper - lightly spray with Pam

2) In a medium bowl combine PB, coconut flour, icing sugar & vanilla/salt - stir until smooth

3) Pat into baking sheet - chill for 3 minutes in the freezer

4) Melt chocolate chips and coconut oil in microwave in 30 second intervals, stir into smooth

5) Pour over peanut butter base, top with sea salt and freeze for 1 - 2 hours

6) Cut into squares

*** recipe is easily changed to Keto by altering the peanut butter, icing sugar and chocolate chips to Keto friendly versions
