Quick & Easy Thai Chicken Noodle Soup

My goal with my recipes is to find ways to create delicious meals all the while not spending a ton of cash. Especially now I am unable to work due to the pandemic that is changing our world as we know it. I was able to take the original recipe and adapt it to be under $4/serving - how cool is that? P loved it as it was super low in calories and had an additional boost of protein due to the addition of some tofu.


Ingredients:

· 2 TBSP coconut oil

· 1 white onion, chopped

· 2 TBSP grated fresh ginger

· ¼ cup lemon grass (I found a small package in the spice section of produce. I am certain you would also find it at Asian markets)

· 4 cloves garlic, chopped

· 8 cups broth (I used Campbell's Thai broth)

· 2 cups water

· 1 tsp salt

· 1 cup chopped cooked chicken breast or thigh (I used pieces from a Safeway rotisserie chicken)

· 1 cup mushrooms, sliced

· 4 – 6 ounces vermicelli rice noodles (or angel hair pasta)

· 2 – 3 tsp fish sauce (to taste)

· 2 – 3 tsp Sriracha chili sauce (to taste)

· Juice of lime

Optional Garnishes:

Cilantro, green onion, bean sprouts, lime wedges, hot chili flakes, Sriracha, oyster sauce


Instructions:

1.) In a large pot heat oil over medium heat. Add onion and sauté for 2- 3 minutes until tender. Add ginger, lemongrass and garlic, stirring occasionally until fragrant. Add stock, water & salt – bring to a boil, then turn down to low heat and simmer uncovered for 15 minutes (can be longer)

2.) Add fish sauce, chili, lime juice- taste for saltiness, heat and adjust as necessary (if you prefer mild flavors start with 2 tsp of each and add more if desired)

3.) Add mushrooms, chicken, and tofu* and simmer for 8-10 minutes

4.) While the mushrooms & chicken are absorbing the flavors bring a pot of water to boil, add the rice noodle for 2 – 3 minutes, drain immediately and rinse with cold water

5.) To serve – put noodles in a bowl, add 2 ladles the soup broth. Garnish with your choice of above – my recommendations is “all of them”

** tofu can be added to the chicken soup for additional protein, or if a vegetarian option is required
